In the recent publication by GESAAF – UNIFI, titled “Influence of Conventional and Biodynamic Winemaking Processes on the Characteristics of Wines from Sangiovese Grapes', which appeared in issue 275 of Industrie delle Bevande in May/June 2018, my signature and the reference to the website viticolturabiodinamica.it were used without authorization.
I have never endorsed the work in question, and not only do I disagree with its conclusions—which often diverge from the actual content of the text—but I also challenge the accuracy of many of the data reported in the paper.
I participated with four biodynamic wineries in the project to compare analytical and sensory aspects arising from the different winemaking processes, fully believing it to be a scientific study where open dialogue between different research approaches (mechanistic and holistic) was possible. I trusted that the analytical data and their interpretations would and should be objective.
In the appropriate forums and through this journal, both rebuttals and the corrected results of the data in my possession will be published, together with specific analyses of the biodynamic method applied in the research.
