In the recent publication by GESAAF – UNIFI, titled “Influence of Conventional and Biodynamic Winemaking Processes on the Characteristics of Wines from Sangiovese Grapes', which appeared in issue 275, May/June 2018, of Industrie delle Bevande, my signature and reference to the website of the journal, viticolturabiodinamica.it, were illicitly included.
I never signed the work in question, and not only do I not agree with its conclusions—which are often inconsistent with the content of the text itself—but I also contest the accuracy of many of the data reported in the same work.
I participated with four biodynamic farms in the project to compare analytical and sensory aspects arising from the different winemaking processes, in full and complete belief that this was a scientific endeavor and that an open dialogue between the different research approaches (mechanistic and holistic) would be possible, trusting that the analytical data and their interpretations could and should be objective.
In the appropriate forums and on this journal, both my formal denials and the corrected results of the data in my possession will be published, together with the specific analyses of the biodynamic method applied in the research.
